The Coon-Billy Cookers first got their introduction into the S.E. Texas BBQ scene, not competing just helping out some co-workers. Some friends asked then to supply a cooking team with T-Boy�s Cajun Seasonings for the YMBL BBQ Cook-Off in April 2003. The team took 2nd Place in chicken, 3rd Place in ribs, and 5th place in brisket. When asked to compete in a Labor Day cook-off, these co-workers declined so the Coon-Billy Cookers stepped up and took their place. The first outing did not look good for the team, but they began bringing "Jello-Eggs" to their events, it has been a fun and successful ride ever since. The name of the team came from a brother of the two team founders. He said they were using Coon-ass seasonings, cooking Texas BBQ and were both raised as Arkansas hillbillies.
